What ingredients are required to make Rajasthani Methi Muthia?
Fenugreek leaves – 2 cups (chopped)
Coarse wheat flour – 1 cup
Green chillies – 4
Green turmeric – 2 inches
Ginger – 2 cups
Yoghurt – 4 teaspoons
Hing – 1/2 teaspoon

Salt – to taste
Red chilli powder – 1 teaspoon
Sesame seeds – 3 teaspoons
Sugar – 2 teaspoons
Wheat flour – 1/2 cup
Water – 1 to 2 teaspoons
Gram flour – 1/2 cup
Oil – for frying
How is Rajasthani Methi Muthia made?
Step 1 – First of all, you have to take fenugreek leaves, then wash them thoroughly, chop them finely and keep them aside.
Step 2 – Now, combine ginger, green chillies, turmeric, and a little salt in a mixture. Grind it coarsely to form a paste.
Step 3- Then, pour the yoghurt into a bowl. Add the prepared paste, salt, red chilli powder, asafoetida, sugar, sesame seeds, fennel seeds, and oil. Mix everything well.

Step 4 – Now add the chopped fenugreek leaves, then coarse wheat flour, regular wheat flour, and gram flour. Add water little by little and knead the dough. However, the dough should not be too soft. Cover and let it rest for 10 minutes.
Step 5 – Now apply some oil on your palms, and then take a small portion of the dough and make it into a light oval shape.

Step 6 – Now heat oil in a pan and fry the muthiyas over medium heat. Once golden brown and crispy, remove and let them cool.
Step 7- Once cooled, store them in an airtight container. Enjoy them with hot tea. Methi Muthia stays fresh and crisp for 8-10 days.
