Ingredients for making Rajasthani Papad Ki Sabji

Moong dal papads – 3

Mustard oil or ghee – 1 tablespoon

Cumin seeds – 1 teaspoon

Ginger – 1 inch, chopped

Asafoetida – 1/4 teaspoon

Green chilli – 1, chopped

Garlic cloves – 3

Kasoori methi (dried fenugreek leaves)

Turmeric powder – 1/4 teaspoon

Tomatoes – 2 (pureed)

Red chilli powder – 1/2 teaspoon

Coriander powder – 1/2 teaspoon

Yoghurt – 1/2 cup (whipped)

Coriander leaves – 2 sprigs (finely chopped)

Salt – to taste

How is Rajasthani Papad Ki Sabji made?

1-First, take the papad and roast it well over a gas flame, in a microwave, or on a griddle, and then break it into small pieces.

2- Make a paste of garlic, ginger, and green chillies and set it aside.

3- Then, heat some ghee in a pan over medium heat, add the cumin seeds and let them splutter. After that, add the garlic, ginger, and green chilli paste, as well as the dried fenugreek leaves.

4- Sauté it for a few seconds. Then add turmeric powder, tomato puree, red chilli powder, and coriander powder and let it come to a rapid boil.

5- Then, after one minute, add the yoghurt and papad, and continue stirring the mixture until all the ingredients are well combined.

6- Then cook this mixture over low heat for 5 minutes, and if the yoghurt starts to thicken slightly, let it cook until the papad is completely soaked. Then, while it’s cooking, verify the seasoning and adjust the salt and spices as needed.

7- Then turn off the gas and transfer the papad curry to a serving bowl and serve it hot.
