Ingredients:
For the Gatte (Dumplings):

1 cup besan (gram flour)

½ tsp carom seeds (ajwain)

½ tsp turmeric powder

½ tsp red chili powder

1 tsp ghee

Salt to taste

3-4 tbsp yogurt
For the Curry:

2 tsp ghee
-
½ tsp asafoetida (hing)

1 tsp cumin seeds
-
2 whole red chilies
-
1 cup finely chopped onion
-
2 finely chopped green chilies
-
1 tbsp ginger-garlic paste
-
½ tsp coriander powder
-
1 cup whisked yogurt
-
Fresh coriander for garnish
Instructions:

Prepare the Gatte:

In a bowl, mix besan, turmeric, red chili powder, carom seeds, ghee and salt

Add yogurt and knead into firm dough (add water if needed)

Roll into cylindrical shapes (about ½ inch thick)

Cook the Gatte:

Boil water in a pan and gently add the gatte

Cook for 8-10 minutes until they float to the surface

Remove, cool and cut into 1-inch pieces

Make the Curry:

Heat ghee in a kadhai, add cumin, asafoetida and whole red chilies

Sauté onions until golden brown

Add green chilies and ginger-garlic paste, cook for 1 minute

Add turmeric, red chili powder, coriander powder and salt

Reduce heat and slowly add whisked yogurt while stirring continuously

Add the gatte pieces and simmer for 5 minutes
