Capsicum (bell pepper) – 1 medium

Oil or ghee – 3-4 tablespoons

Cumin seeds – 1 teaspoon

Bay leaf – 1

Turmeric powder – 1/2 teaspoon

Kashmiri red chilli powder – 1 teaspoon

Coriander powder – 1 teaspoon

Salt – to taste

Garam masala – 1/2 teaspoon

Fresh coriander leaves – for garnish

Kasuri methi (dried fenugreek leaves) – 1 teaspoon

Whole coriander seeds – 1 tablespoon

Whole cumin seeds – 1 teaspoon

Whole red chillies – 2-3

Fennel seeds – 1/2 teaspoon

What is the method for making Kadhai Paneer?

1- You will need to heat 1-2 tablespoons of oil in a pan. Then, fry the paneer pieces until they are lightly golden brown. After that, sauté the bell pepper pieces in the same oil for 1-2 minutes until they are slightly crunchy, then remove them and set them aside.

2- Now, heat the remaining oil or ghee in the pan, then add cumin seeds and bay leaf. Once the cumin seeds start to crackle, add the finely chopped onions and sauté until golden brown. After that, add the ginger-garlic paste and sauté.

3- Then add the tomato puree and salt to taste, mix well, and continue cooking the sauce until the oil separates.

4- Next, add the coriander powder, turmeric, Kashmiri red chilli powder, and then the prepared special spice blend and mix well. Then continue to sauté for 2 minutes over low heat.

5- After that, add a little water and let the gravy simmer for 2 minutes. Now add the roasted paneer and bell peppers.

6- Then, add the garam masala and crushed fenugreek leaves, mixing them in by hand. Now, cover the vegetables and cook for 3-5 minutes.
