Ingredients:

For the Gatte (Dumplings):

  • 1 cup besan (gram flour)

  • ½ tsp carom seeds (ajwain)

  • ½ tsp turmeric powder

  • ½ tsp red chili powder

  • 1 tsp ghee

  • Salt to taste

  • 3-4 tbsp yogurt

For the Curry:

  • 2 tsp ghee

  • ½ tsp asafoetida (hing)

  • 1 tsp cumin seeds

  • 2 whole red chilies

  • 1 cup finely chopped onion

  • 2 finely chopped green chilies

  • 1 tbsp ginger-garlic paste

  • ½ tsp coriander powder

  • 1 cup whisked yogurt

  • Fresh coriander for garnish

Instructions:

  1. Prepare the Gatte:

    • In a bowl, mix besan, turmeric, red chili powder, carom seeds, ghee and salt

    • Add yogurt and knead into firm dough (add water if needed)

    • Roll into cylindrical shapes (about ½ inch thick)

  2. Cook the Gatte:

    • Boil water in a pan and gently add the gatte

    • Cook for 8-10 minutes until they float to the surface

    • Remove, cool and cut into 1-inch pieces

  3. Make the Curry:

    • Heat ghee in a kadhai, add cumin, asafoetida and whole red chilies

    • Sauté onions until golden brown

    • Add green chilies and ginger-garlic paste, cook for 1 minute

    • Add turmeric, red chili powder, coriander powder and salt

    • Reduce heat and slowly add whisked yogurt while stirring continuously

  4. Final Assembly:

    • Add the gatte pieces and simmer for 5 minutes

    • Garnish with fresh coriander

    • Serve hot with bajra roti or steamed rice

  • Maintain low heat when adding yogurt to prevent curdling

  • The gatte dough should be firm but not dry

  • For richer flavor, use homemade yogurt
