What ingredients are needed to make Amla Launji?
Amla (Indian gooseberry) – 500 grams
Fennel seeds – 2 teaspoons
Jaggery – 250 grams (grated)
Fenugreek seeds – 1 teaspoon
Turmeric powder – 1/2 teaspoon

Red chilli powder – 1 teaspoon
Salt – to taste
Mustard seeds – 1 teaspoon
Water – 1 cup (as needed)
Mustard oil – 4 tablespoons
How is Amla Launji made?
Step 1 – First, wash the gooseberries and boil them until they are slightly soft. Then, let them cool, cut them into small pieces, and remove the seeds.
Step 2 – Next, heat oil in a pan and add mustard seeds, fennel seeds, and fenugreek powder to temper it. As soon as the spices become fragrant, add turmeric and red chilli powder.

Step 3 – Next, add the chopped gooseberries and sauté for 3-4 minutes. Then add the jaggery and continue stirring over low heat until the jaggery melts and a sticky mixture forms.
Step 4- Once everything is cooked, turn off the gas and, after it has cooled down, transfer it to a clean, dry glass jar and store it in the refrigerator.
Step 5- Store Amla Launji in an airtight container. If kept in the refrigerator, it can stay fresh for 20 to 25 days.
