Ingredients for Kundru ki Sabzi:

Kundru: 250 grams (Try to buy fresh and small Kundru, which tastes better in the curry)

Oil: For frying and preparing the curry

Spices:

Cumin seeds

Green chillies

Finely chopped onion (1)

Ginger-garlic paste

Turmeric powder

Red chilli powder

Coriander powder

Kasuri methi

Gram flour (1 tsp)

Finely chopped tomato (1)

Salt (to taste)

Fresh cream (1 tsp, it will give a creamy texture to the curry)

Excellent recipe for making Chatpati Kundru ki Sabzi:

Prepare the Kundru: First, wash the Kundru. Remember, Kundru is nKundruled. After washing, cut each Kundru lengKundru into four parts, but do not separate the iy. This will keep Kundrundru together.

Fry the kundru in a pan. Now add chopped kunKundrud Kundrualt and fry for 2-3 minutes. This will make the kundru sligKundruofter. Please remove them and set them aside.

Prepare the masala: Now, add some more oil in the same pan and temper the cumin seeds. When the cumin seeds start to crackle, add finely chopped green chillies and onions and fry until golden.

Gram flour twist: After frying the onions, add ginger-garlic paste and most importantly, one spoon of gram flour and fry on a low flame. Gram flour will give a different taste and thickness to the vegetable.

Add powdered spices: Now add turmeric, red chilli and coriander powder and mix well. When the spices are well-fried and start to release a pleasing aroma, add finely chopped tomatoes and a pinch of salt, and continue cooking. Note that you had also added salt to the Kundruu, so add salt accordingly.

Magic of Cream and Kundru: When the masala starts releasing oil, add the already-fried Kundru and a full of fresh cream, and mix well. This step will enhance the taste of the vegetable manifold!

Make the gravy: After frying the vegetables for 1-2 minutes more, add water to your preference so that the Kundru cooks in the sauce. Finally, add the Kasuri Methi and mix well.

Your vegetable is ready: Now cover the pan and cook on a low flame for 5-7 minutes, until the Kundru is cooked.
