Ingredients for Patra (Patra Ingredients)- Here are the ingredients you need to make this delicious dish:
Arbi leaves: 10-12 (fresh and big)
Gram flour: 1 cup
Rice flour: 2 tbsp (makes the patra crispy)
Jaggery powder: 2 tbsp (or as per taste)
Tamarind pulp: 2 tbsp (nice balance of sweet and sour)
Green chilli paste: 1 tbsp (or as spicy as you like)
Turmeric powder: 1 tsp
Coriander powder: 2.5 tsp
Asafoetida: ½ tsp
Garam masala: 1 tsp
Salt: as per taste
Baking soda: a pinch
Rye (mustard seeds): 1 tsp
Cumin seeds: 1 tsp
White sesame seeds: 1 tsp
Oil: 2-3 tbsp
Freshly chopped coriander leaves
Grated coconut (for garnishing) for )
How to make delicious Gujarati Patra? (Patra Banana Ki Vidhi)
Prepare the leaves: First of all, wash and clean the arbi leaves thoroughly. Carefully remove their thick veins or stalks, so that it is easy to roll the patra.
Make the batter: Now take jaggery powder and tamarind pulp in a bowl. Mix them well till the jaggery dissolves completely. Now add green chilli paste, turmeric, coriander powder, asafoetida, garam masala, salt and baking soda. Mix everything well.
Mix the base: Now add gram flour and rice flour and add water slowly. Keep mixing it till a thick and smooth paste is formed. Take care that there are no lumps in it.
Roll the patra: Place one arbi leaf upside down on a clean surface and spread a thin batter of gram flour on it. Now place another leaf upside down on it and apply the batter again. Similarly place 3-4 leaves one above the other and make a roll. Make the rolls a little tight so that they do not open while steaming.
Steam: Place these rolls on a greased tray and steam them in a hot steamer for 20-25 minutes. Once they are cooked, let them cool completely.
Cut and temper: Once cooled, cut the Patra rolls into round pieces. Now heat oil in a pan and add mustard seeds, cumin seeds and white sesame seeds. When they crackle, add the chopped Patra pieces and mix well.
Garnish and serve: Garnish the Patra with fresh coriander leaves and grated coconut. Your hot and delicious Patra is ready! Serve it with green chutney or sauce.
Arbi leaves should not be eaten without cooking or steaming them properly, as they contain calcium oxalate crystals that can cause itching and irritation in the throat. A mixture of gram flour and tamarind helps in reducing the effect of these crystals. Therefore, always eat Patra after steaming it properly.
