Ingredients required to make Aloo Kachalu:

Boiled potatoes: 4-5

One onion: finely chopped or cut into strips

Tomato: 1 (cut into round shapes)

Tamarind pulp: 2-3 tablespoons (dissolve in water and strain)

Lemon: 1 (for juice)

Green coriander: finely chopped (for garnishing)

Cumin seeds: 4 teaspoons

Black pepper: 1 teaspoon (whole)

Dry red chillies: 2

Whole coriander: 2 teaspoons

Salt: according to taste

Black salt: according to taste

Chaat masala: according to taste

Besan sev: for garnishing (thin ones)

Easy method to make Aloo Kachalu:

1. Prepare the potatoes:

First, boil 4-5 potatoes. When they cool down, peel them and cut them into round or any shape of your choice.

2. Mix all the ingredients:
Put the chopped potatoes in a large bowl. Now add the round cut tomatoes and the sliced onions to it.

3. Prepare the aromatic masala:
Put cumin seeds, whole black pepper, whole coriander, and dried red chillies in a pan and lightly fry them on a low flame. Ensure that the spices do not burn; instead, let their fragrance release. When it cools down a bit, put them in the mixer grinder and make a coarse powder.

4. Magic of spices:
Add the prepared aromatic masala to the mixture of potatoes, onions, and tomatoes. Also, add plain salt, black salt and a little chaat masala to it as per taste.

5. Lemon and tamarind twist:
Now add lemon juice and finely chopped green coriander to it. Add some water to the tamarind pulp and strain it so that the sour liquid separates. Add this sour water to the potato kachalu mixture as well.

6. How to serve:

Mix all the ingredients well so that all the flavours blend. Garnish with finely chopped Besan Sev.
