Desi Recipe for Raw Mango Chutney
So, without further delay, let’s learn the Desi way of making this wonderful chutney:
Ingredients:
Green coriander: 3 cups
Mint leaves: 1 cup
Chopped green chillies: 2 teaspoons (you can add more or less according to your taste)
Ginger slice: 2 inches long
Garlic cloves: 1-2
Peeled and chopped green raw mangoes: ½ cup
Salt: ½ teaspoon (according to taste)
Asafoetida: ¼ teaspoon
Cumin seeds: 1 teaspoon
Cold water: ¼ cup
Ice cubes: 2 (to keep the color of the chutney green, optional)
Lemon juice: a little (if the chutney seems too spicy, optional)
Method of making:
First, add green coriander, mint, green chillies, ginger, garlic, green mango, salt, asafoetida, and cumin seeds to a mixer jar.
Now add ¼ cup cold water and two ice cubes if you want to keep the colour of the chutney green.
Grind all the ingredients well to make a thick paste.
Taste the chutney and add more salt if needed.
If you feel that the chutney has become too spicy, then squeeze some lemon juice in it. This will balance the taste.
