In the Jamui district of Bihar, near Khaira Bazaar, there is a small dhaba called ‘Munna Dhaba’, which is renowned for its exceptional Bihari mutton. The mutton curry here is prepared early in the morning and cooked on a low flame for about 3 hours. When it is ready, its aroma and colour make your mouth water.
Munna Kumar, the owner of Munna Dhaba, tells why the taste of his mutton is so special. He says that this method is entirely traditional. First, the onion is fried until it turns golden brown. Then, ginger-garlic paste and mutton are added to it, and it is fried on a low flame for hours.
According to Munna ji, frying the mutton is the most crucial step. He says, “If you fry the mutton well, its taste will be even more enhanced.” He fries the mutton until it starts releasing its oil. More than half of the cooking of the mutton is done in this frying.
No readymade or outside masala is used in the mutton of Munna Dhaba. Munna says that he only uses coriander, cumin, black pepper powder, ginger, garlic and garam masala. This is the reason why his mutton has the authentic Bihari taste.
Another essential tip that he gives is regarding the use of water. When it is time to add water after frying the mutton, people often add cold water, which abruptly stops the cooking process. Munna ji says that instead of this, hot water should always be used; this enhances the taste of the mutton even more.
