What ingredients are needed to make Hariyali Poha?
Poha (flattened rice) – 2 cups (thick variety)
Green chillies – 2 (finely chopped)
Onion – 1 (finely chopped)
Coriander leaves – 1/4 cup
Capsicum – 1/2 (finely chopped)
Mint leaves – 1/4 cup
Ginger – 1/2 teaspoon (grated)
Mustard seeds – 1 teaspoon
Curry leaves – 5-6

Cumin seeds – 1 teaspoon
Asafoetida – 1 pinch
Turmeric powder – 1/2 teaspoon
Peanuts – 1 teaspoon
Lemon juice – 1 teaspoon
Salt – to taste
Coconut powder – 1 teaspoon (optional)
Oil – 2 tablespoons
How is Hariyali Poha made?
1- First, grind the coriander, green chillies, mint, and ginger in a blender with a little water.
2- Then, thoroughly wash the poha in water and place it in a sieve to drain off any remaining water.
3- Then heat oil in a pan, and add cumin seeds, mustard seeds, turmeric and asafoetida. After that, add curry leaves and peanuts.

4- Add the onions and bell peppers and sauté lightly. Then add the green paste and continue cooking until the oil separates.
5- Then add the poha and mix well so that the green color is evenly distributed.
6-Then add lemon juice, coconut powder, and salt to taste.
7- Now, arrange the hot green poha and coriander on a plate and serve.
