Palak Dhokla recipe Ingredients:

Semolina – 2 cups
Gram flour – ½ cup
Spinach – ½ cup
Curd – 1 cup
Oil – 1 tablespoon
Green chilies – 2-3 (according to your taste)
Ginger – 2 inches
Lemon juice – 3 teaspoons
Eno – 1 teaspoon
Curry leaves – 10-12
Mustard seeds – ½ teaspoon
Asafoetida – ½ teaspoon
Salt – according to taste

Method of making spinach dhokla:

First of all, put gram flour and curd in a vessel and whisk it well. If you like spicy, then you can add green chilies as per your choice.
Wash the spinach thoroughly and grind it in a mixer to make a thin paste.
Mix curd and spinach paste in a large bowl. Then add semolina, green chilies, ginger, salt and oil and mix. If the curd is fresh, then add 1-2 teaspoons of lemon juice. Now keep this mixture covered for 15 minutes, so that the semolina swells well and the dhokla becomes completely spongy.

Now prepare the gram flour mixture. Take the remaining curd in another bowl. Add gram flour to it and make a lump-free batter. Add green chillies, ginger and asafoetida and mix. Keep this covered for 15 minutes as well.

Make sure that both the mixtures swell well.

Heat water in a steamer. Take a square vessel and grease it with oil.

Add Eno fruit salt to the spinach mixture and mix immediately. Put it in a greased vessel and spread it.

Now add Eno to the gram flour mixture and make a thin layer over the spinach mixture.

Put the vessel in the steamer and close the lid. Steam for 20 minutes. The two-coloured dhokla will look absolutely unique!

After 20 minutes, check the dhokla by inserting a knife. If the knife comes out clean, then the dhokla is ready. If the batter seems a little sticky, cook for 2-5 minutes more.

On the other hand, heat oil in a pan. Add mustard seasoning. When the mustard seeds crackle, spread this seasoning over the dhokla.

Your delicious Palak Dhokla is ready! Serve it with green coriander chutney or tomato sauce.
