It may sound a bit strange to you, but believe me, its taste and its benefits will surprise you. Ingredients to make Cucumber Poha:

1 large cucumber (grated)

1 bowl of Poha (flat)

2 green chillies (finely chopped)

Salt (according to your taste)

Lemon juice (according to your taste)

8-10 curry leaves

2-3 tbsp almonds or peanuts

1/2 tsp mustard seeds

2 tbsp oil

Coriander leaves (finely chopped, for garnishing)

Easy way to make Cucumber Poha:

Firstly, wash the Poha thoroughly by putting it in a sieve. Keep it for just a minute so that it becomes soft, but not sticky.

Now heat oil in a pan. When the oil is hot, add mustard seeds and let it crackle.

After this, add curry leaves, green chillies and almonds or peanuts and fry lightly.

Now add grated cucumber to it and cook for two minutes. Keep in mind, do not cook the cucumber too much, just soften it a little so that its crispness remains.

Now add turmeric and salt to this mixture.

Now add soaked poha and mix well. Cover it and cook on low flame for just 2-3 minutes.

Finally turn off the gas, add lemon juice and chopped coriander and mix.

Serve hot cucumber poha and feed everyone. This breakfast is so tasty that you would like to make it again and again.

Is poha really healthy?

Poha is a gluten-free and light breakfast. Poha made in less oil can be a great breakfast. It contains good amount of fiber and iron, which are considered good for digestion. If you add green vegetables like cucumber, onion, carrot or peas to it, then its nutritional value increases even more. However, how healthy it is depends on the ingredients used in it and the way it is made. Poha with too much oil, too much sugar or too much frying can be harmful for you. But poha with less oil and green vegetables is a very good option.
