Ingredients that will make this dish special
Brinjal: 2 large (black or green brinjals whichever is available)
Onion: 2, finely chopped
Tomatoes: 3, finely chopped
Curd: 250 gm (Note, this is not a traditional ingredient but adding this makes the bharta creamier and a little sour in taste which some people like. You can omit it if you like)
Ginger-garlic paste: 2 tsp
Oil: 1/2 cup (use mustard oil for a dhaba flavour)
Red chilli powder: 2 tsp
Turmeric powder: 1/3 tsp
Coriander powder: 1 tsp
Garam masala: 1 tsp
Salt: to taste
Green chilli: 1, finely chopped
Coriander leaves: 1 tsp, finely chopped (for garnishing)
Method: Step-by-step
Frying the brinjal: First, wash and dry the brinjal thoroughly. Then, lightly apply oil on it and fry it on low flame on the gas. Fry it by turning it from all sides until its skin becomes black and soft. After frying, let it cool and then remove the peel and mash it well.
Preparing the Tadka: Now heat oil in a pan. When the oil is hot, add finely chopped onion and fry it till it becomes golden.
Frying the spices: When the onion is fried, add ginger-garlic paste to it and fry for a minute so that the rawness goes away. Now add chopped tomatoes and cook till the tomatoes melt and the oil starts separating.
The magic of taste: After this, add red chili powder, turmeric powder, coriander powder and salt to it and mix well. Fry the spices on low flame for 1-2 minutes. Meanwhile, if you are using curd, whisk it and mix it with the spices and stir for 1 minute.
Making the Bharta: Now add the mashed brinjal to the pan and mix it well with the spices. Let it cook on low flame for 5-7 minutes so that all the flavours mix well.
Garnishing: Your delicious Baingan Bharta is ready! Garnish it with chopped coriander leaves, green chillies and a little garam masala.
