For the chicken marinade
Chicken – 750 grams
Whisked yoghurt – 1/2 cup

Green cardamom – 2
Cloves – 2

1 tablespoon ghee
1 black cardamom (crushed)
1/2 tablespoon oil
3-4 bay leaves
2 cloves
1 teaspoon cumin seeds
1 tablespoon ginger (chopped)
5-6 medium-sized onions
6-7 garlic cloves

1/4 teaspoon turmeric powder
1 1/2 teaspoons coriander powder
Salt to taste
1 teaspoon red chili powder
2 medium-sized tomatoes
Coriander leaves for garnishing
2 tablespoons ghee

How is Dhaba-Style Chicken Curry made?
Step 1- First of all, put chicken, salt, curd, turmeric powder, green chili, red chili powder, cardamom powder, coriander powder, and cloves in a vessel, mix everything well, and keep it aside for 15-20 minutes to marinate.
Step 2 – After this, heat ghee in a pan, add a little oil, then add cardamom, cumin seeds, bay leaves, and cloves and fry them. Then add ginger and garlic and fry until fragrant.
Step 3 – Then, add the onion to the pan and fry until it turns a rich colour. Then, add turmeric powder, coriander powder, salt, chilli powder, and a little water to the pan, mix all the spices well, and cook for a while.

Step 4- Then, cover the tomatoes in the pan and cook until they release oil. Then, add the marinated chicken to the pan, mix well, and cook until the ghee begins to float to the top.
