Method for making lentil and spinach curry

- First, you need to wash the lentils thoroughly 4 to 5 times and set them aside.

- Then, cook the lentils in a pressure cooker or a heavy-bottomed pot with 3 or 4 cups of water and salt to taste. In a pressure cooker, cook for 10 to 15 minutes, or until 3 or 4 whistles. Make sure the lentils are soft and fully cooked.

- Next, prepare the tempering in a pan. To do this, heat some oil in the pan, and once the oil is hot, add cumin seeds and asafoetida. Add the finely chopped onion and sauté for 1 to 2 minutes, until the onion is lightly golden brown.

- Add the crushed ginger and garlic to it, then sauté for 1 or 2 minutes. Then add the tomatoes, cover, and cook for 5 minutes.

- Then add turmeric, coriander powder, red chili powder, salt, and garam masala and sauté it.

- Add this tempering to the cooked lentils, then add the chopped spinach and cook on low heat until it softens, adding water if needed.

-Finally, add fresh coriander and lemon juice, and serve with hot dal or roti.
