Ingredients required to make Mughlai Green Dal
1 cup whole green moong dal
2 bay leaves
2 big cardamoms
1 inch cinnamon stick
Black pepper, coriander, red chilli, turmeric and garam masala powder
Kasuri methi
1 cup curd
Finely chopped onion
Finely chopped ginger and garlic
Finely chopped green chillies
Desi ghee or oil
Salt to taste
Fresh coriander and fried onion (for garnish)
Fresh cream (optional)
Method to make Mughlai Green Dal
1. Prepare the lentils:
First of all, wash the green moong dal and soak it in water for 4-5 hours.
Next, add the lentils to the cooker.
Add turmeric, salt, bay leaves, big cardamom and cinnamon and cook till 2-3 whistles. Keep in mind that the lentils should not melt too much.
2. Prepare the Tadka:
Now heat 2-3 tbsp of Desi Ghee in a pan.
Add finely chopped onion and fry till it turns golden.
Then add ginger, garlic and green chillies and mix well.
Cook it on low flame for a few minutes.
Now add red chilli, black pepper and coriander powder and mix well.
3. Magic of curd:
Turn off the gas and let the pan cool down a bit. Then add curd to it and keep stirring continuously so that the curd does not split.
After the curd is mixed, turn on the gas again and cook on low flame for 2 minutes.
4. Mix everything:
Now add the cooked lentils to the tadka. If the lentils seem too thick, then adjust the consistency by adding some water.
Let it cook on low flame for 5-7 minutes, so that all the spices mix well in the lentils.
5. Final Tadka:
When the dal is cooked well, add garam masala and kasuri methi and mix well.
Finally, add finely chopped coriander leaves and fried onions.
If you wish, garnish with fresh cream and serve with hot rice or roti.
