Ingredients for Jackfruit Curry (Kathal ki Sabzi):

Jackfruit ( Kathal Ki Sabzi)
Tomatoes
Finely chopped onions
Whole green chilies
Whole dried red chilies
Black cardamom (Badi Elaichi)
Whole garam masala spices
Bay leaves
Fresh coriander leaves
Coriander powder
Red chili powder
Salt (to taste)
Mustard oil
Ginger
Garlic

**Preparation Method:**

To prepare the jackfruit curry, first thoroughly wash the jackfruit pieces and fry them in hot mustard oil.
Next, heat some oil in a pan or wok (kadai). Add the whole dried red chilies and 1-2 whole green chilies, and fry them briefly.
Now, add the chopped onions and sauté them well until golden brown. Once the onions are sautéed, add the fried jackfruit pieces and fry them together for a minute or two.
Add the ginger-garlic paste to the pan, along with the whole garam masala spices, turmeric powder, coriander powder, and red chili powder. Sauté everything thoroughly to cook the spices. At this stage, add the finely chopped tomatoes and cook until they soften and blend into the curry base.
Now, add water to the pan, cover it, and let it simmer for 2 to 3 minutes to allow the flavors to meld.
Once the curry is fully cooked and ready, garnish it with some fresh coriander leaves and serve hot.
