Versatile: Customize with veggies, spices, or sev for extra crunch.
Ingredients You’ll Need
2 cups poha (thick or medium variety)
1 onion, thinly sliced
1 potato, thinly sliced
½ cup peanuts
1 tsp mustard seeds (rai)
½ tsp turmeric powder
1-2 green chilies, finely chopped
8-10 curry leaves
2 tbsp oil
Salt to taste
Fresh coriander, lemon juice, and sev (for garnish)
Step-by-Step Instructions
Step 1: Wash & Drain Poha Properly
Place poha in a sieve and rinse gently under running water (do not soak or rub hard).
Let it sit in the sieve for 2-3 minutes to drain excess water. This keeps it fluffy.
Step 2: Tempering & Sautéing
Heat oil in a pan. Fry peanuts until crispy, then set aside.
In the same oil, add mustard seeds. Once they splutter, add curry leaves, green chilies, onions, and potatoes.
Sauté on medium heat until potatoes soften (5-6 mins).
Add turmeric, salt, and optional red chili powder for heat.
Step 3: Combine & Steam
Gently fluff the poha with fingers and add it to the pan. Mix lightly.
If the poha feels dry, sprinkle 1-2 tbsp water, cover, and steam for 2 minutes on low heat.
Step 4: Garnish & Serve
Top with fried peanuts, fresh coriander, a squeeze of lemon, and sev.
Serve hot for the best taste!
