To make Karela (bitter gourd)  curry or stuffed bitter gourd, you should select the bitter gourd carefully. While taking Karela( bitter gourd), keep in mind that the Karela ( bitter gourd) is fresh and green and avoid taking yellow and thick bitter gourd, otherwise it will spoil the taste of your vegetable.

To make stuffed bitter gourd, first cut the top and bottom of the bitter gourd properly, and now peel the bitter gourd thoroughly and clean it properly. Now, make a big incision in the middle of the bitter gourd and keep the seeds inside. Make sure that the seeds and peel are not thrown away. Mix them with the spices and stuff them in the bitter gourd. If you choose the right bitter gourd. So the taste of your food will double.

How to remove the bitterness of Karela (bitter gourd)

To reduce the bitterness of bitter gourd, first of all use Namak in it, apply salt to all the Karela ( bitter gourd)  and leave it for some time. When the bitter gourd starts releasing water, then press it and take out the extra water, which will eliminate its bitterness. After this, you will taste the bitter gourd, and the bitterness will also disappear.

The most important thing in Karela (Bitter Gourd)  Bharwa is its stuffing, for which you can lightly roast cumin, coriander, black pepper and celery. Now add ginger, garlic and green chilli and grind it coarsely. Along with this, to maintain the taste, add light mango powder and jaggery, the mixture of which will eliminate the bitterness of the bitter gourd and will make it taste slightly spicy.

Now, heat oil in a pan on the gas, add finely chopped onion and fry it properly. Now add all the ground spices in it and fry it properly. When the spices start smelling, turn off the gas. Now your stuffing is ready.

Now fry all the bitter gourds from both sides with proper tempering and then fill the cooled stuffing. Keep in mind that fill the stuffing lightly, as overfilling will prevent the bitter gourd from cooking properly.

When everything is filled with stuffing, then once again cook it gently from both sides in hot oil. Now your stuffed bitter gourd is ready. Once served, serve it with roti puri or dal rice.
