Easy & Tasty Stuffed Parwal  Recipe: One vegetable that is always in the fridge in summers and is useful in every situation is Parwal! Whether it is making gravy or spicy Bhujia, Parwal is prepared in no time. But if you are bored of eating the same kind of Parwal everyday, then why not make this time a wonderful stuffed Parwal? It is perfect for lunch, dinner or even for children’s lunchbox and its taste increases even more with roti-paratha. So let’s know how to make this delicious stuffed Parwal! Ingredients required to make stuffed parwal:

7-8 fresh parwal

2 small onions, very finely chopped

2 green chillies, finely chopped (you can add more or less according to your taste)

8-10 garlic cloves

A little turmeric powder

A little red chilli powder (you can add this also according to your taste)

1 teaspoon coriander powder

Half teaspoon cumin powder
Half teaspoon fennel powder
Half teaspoon garam masala

Oil as per requirement

Half teaspoon dry mango powder (this will give a little sourness, which is very nice)

Salt, according to taste

Easy way to make stuffed parwal:

First of all wash the parwal thoroughly. Then remove their peel by scraping them lightly with a knife.

Now cut each parwal from the middle in such a way that it opens into two parts, but does not separate completely.

With the help of a spoon, take out the pulp and seeds inside the parwal and keep it in a separate vessel.

Now chop two onions very finely. The finer you chop, the better the stuffing will be.

Put the pulp and seeds that you had taken out from the parwal in the mixer jar. Also add garlic, a little ginger (if you like) and green chillies and make a very fine paste.

Take out this paste in a bowl. Now add the finely chopped onions to it.

After this, add all the spices – coriander powder, cumin powder, turmeric powder, red chilli powder, fennel powder, dry mango powder and salt as per your taste and mix well. Add a little garam masala as well, this will enhance the taste.

Now add about two teaspoons of oil to this mixture and mix well. Adding oil will bind the stuffing a little and it will be easy to fill.

Now fill this prepared stuffing inside the parwal one by one. Keep in mind that the parwal is completely filled.

Now heat some oil in a pan or wok. When the oil is hot, put all the stuffed parwals in it one by one.

Cover the pan with a lid and reduce the flame to very low.

Let the parwals cook on low flame for about 15-20 minutes. Turn them gently in between so that they get cooked well from all sides and the stuffing inside also gets cooked.

When the parwals become soft and start looking light golden, turn off the gas.

Serve hot and delicious stuffed parwals with roti or paratha and enjoy this wonderful vegetable!
