Dabeli Recipe – If you’re a fan of street food, the very mention of Dabeli will make your mouth water. This delicacy, originating from Kutch in Gujarat, has now captured the hearts (and stomachs) of people all over India. Sweet, spicy, and salty—when these three flavours come together between a soft bun, that’s what we call “true bliss”.

Essential Ingredients:

Potato Masala – 3 boiled potatoes, 2 tablespoons Dabeli masala, 1 tablespoon tamarind chutney, oil, salt.

Crunch and Toppings – Roasted peanuts (spiced), pomegranate seeds, fine sev, chopped onion.

Chutneys – spicy garlic chutney, sweet and sour tamarind chutney, and coriander-mint chutney.

Buns – Ladi pav and plenty of butter.

The Authentic Method (Step-by-Step):

1. The ‘Spicy’ Potato Base: Heat a little oil in a pan. Add the Dabeli masala and sauté on low heat. Now add the mashed potatoes and a little water to make a semi-solid paste. Mix in the tamarind chutney so the flavours are thoroughly combined. Spread it on a plate and garnish with coriander and pomegranate seeds.

2. The Bun ‘Duet’: Cut the pav in half (like a pocket). Spread the spicy red garlic chutney on one side and the sweet and sour chutney on the other.

3. The Real Magic of the Stuffing: Now fill it with the prepared potato masala. Add the spiced peanuts, chopped onion, and pomegranate seeds. Gently press it so everything is set.

4. The Buttery Finish: Heat butter on a griddle. Sprinkle a little Dabeli masala on the edges of the pav (bread rolls) and toast them until crispy on all sides. Finally, roll the edges of the pav in finely chopped sev (crispy chickpea flour noodles) so that they stick to all sides.
