Introduction: Stuffed idli is a creative twist on the traditional South Indian dish, idli. Originating from the southern regions of India, idli is a steamed rice cake made from fermented batter. Ingredients:
For Idli Batter:
- 2 cups rice (preferably parboiled)
- 1 cup split urad dal (black gram lentils)
- Salt to taste
- Water (for soaking and grinding)
For Stuffing:
- 2 medium-sized potatoes, boiled and mashed
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 tablespoon oil
- Salt to taste
- Fresh coriander leaves, chopped
Instructions:
1. Prepare Idli Batter:
- Wash the rice and urad dal separately and soak them in water for about 4-6 hours.
- Drain the water and grind them separately to a smooth paste, adding water gradually as needed.
- Mix the ground rice and dal batter together in a large bowl. Add salt and mix well.
- Allow the batter to ferment overnight or for about 8-10 hours in a warm place.
2. Prepare Stuffing:
- Heat oil in a pan on medium heat. Add mustard seeds and let them splutter.
- Add cumin seeds and asafoetida. Sauté for a few seconds.
- Add chopped onions and green chilies. Sauté until onions turn translucent.
- Add turmeric powder, red chili powder, and salt. Mix well.
- Add mashed potatoes and chopped coriander leaves. Mix until well combined. Cook for 2-3 minutes. Remove from heat and let the stuffing cool down.
3. Assemble Stuffed Idli:
- Grease the idli molds with oil or ghee.
- Pour a spoonful of idli batter into each mold, filling them halfway.
- Place a small portion of the prepared stuffing on top of the batter in each mold.
- Cover the stuffing with more idli batter, filling the molds up to 3/4th full.
4. Steam Stuffed Idli:
- Heat water in the idli steamer or a large pot.
- Once the water comes to a boil, place the idli stand inside the steamer or pot.
- Steam the stuffed idlis for about 12-15 minutes or until a toothpick inserted in the center comes out clean.
- Once done, turn off the heat and let them cool for a few minutes.
5. Serve:
- Carefully remove the stuffed idlis from the molds using a spoon.
- Serve hot stuffed idlis with coconut chutney, tomato chutney, or sambar.
