Ingredients for Baingan Bharta:

  • 1 large eggplant (baingan)

  • 1 onion, finely chopped

  • 5 garlic cloves, minced

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp garam masala

  • 1 tbsp fresh coriander leaves, chopped

Step 1: Roast the Eggplant & Tomato

  • Wash the eggplant and cut it into halves.

  • On a low flame, roast the eggplant directly over the gas stove until the skin chars and the flesh becomes soft.
