If you cook bottle gourd, also known as todi in Bihari, with chickpeas, everyone will be in awe of its taste. You can make it with minimal ingredients and enjoy it with chapatis or rice.
Essential ingredients for making the curry:
Fresh Turai
Soaked chickpeas
Onion
Whole red chilies/green chilies (depending on your preference)
A pinch of turmeric
Salt to taste
Coriander powder
Red chilli powder
A pinch of garam masala
Cumin seeds
How to make:
Wash the Turai and cut it into long pieces.
Now, heat a pan on the stove, add mustard oil, and temper with cumin seeds and red chillies.
Add the chopped onions and sauté thoroughly.
Once they are cooked and release their water, add salt and the remaining spices and cook thoroughly.
To enhance the flavour, you can add chicken masala.
Now add a little water and cook thoroughly.
Cook until the water evaporates, and the mixture becomes dry.
If you prefer a gravy consistency, you can cook it to your liking and then turn off the heat.
Here, we’re going to keep it a little dry, so turn it off once it’s dry.
Enjoy it with roti or rice.
