If you want, you can make it during Janmashtami as well as during fasting. However, the ingredients and rules used in the fast may vary from family to family and tradition.

Ingredients for making Makhana Kheer

Makhana – 2 cups
Full cream milk – 1 liter
Sugar – 4 to 5 tablespoons
Desi Ghee – 1 to 2 tablespoons
Cashews – 8 to 10
Almonds – 8 to 10
Pistachios – 1 tablespoon
Green cardamom powder – ½ tsp
Saffron – 8 to 10 threads
Easy method of making Makhana Kheer
1. First fry dry fruits

Heat 1 to 2 teaspoons of desi ghee in a heavy bottomed pan. Add chopped cashews, almonds and pistachios to it and fry on low to medium flame till it becomes light golden. Take care that the dry fruits do not burn too much. Take them out in a plate and keep them aside.

2. Roast the Makhanas thoroughly

Now add makhana in the same pan and fry on low flame for about 4 to 5 minutes. When the makhana becomes slightly crunchy and aromatic, turn off the gas.

Try pressing a makhana with your hand. If it breaks easily, then understand that the makhana has been roasted well.

3. Grind some makhana coarsely

Take out the roasted makhana on a plate. Now put about three-fourths of the makhana in the mixer and grind them coarsely. If you want, you can crush them lightly with your hands also. Keep the remaining makhana whole.

Coarse makhana will help in giving a slightly thick and creamy texture to the kheer.

4. Cook the milk

Now pour 1 litre of full-cream milk into a heavy-bottomed vessel and let it boil on medium flame. After boiling, reduce the flame and cook the milk for about 8 to 10 minutes. Keep stirring occasionally so that the milk does not stick to the bottom.

5. Add makhana to the milk

Now add coarsely ground makhana and whole makhana to the milk. Mix well and let it cook on low flame for about 10 to 12 minutes.

As the makhana cook in milk, they will start softening, and the kheer will gradually thicken.

6. Enhance taste with saffron and cardamom

Soak saffron threads in lukewarm milk for a few minutes. When the kheer starts thickening, add saffron milk and cardamom powder to it.

After this add roasted cashews, almonds and pistachios.

7. Add sugar at the end

Now add 4 to 5 tablespoons of sugar as per taste and mix well. Cook the kheer on low flame for 3 to 4 more minutes and then turn off the gas.

Keep in mind that the kheer becomes thicker after it cools down, so do not make it too thick while turning off the gas.

Prepare it like this to offer food to Kanha

After Makhana Kheer is ready, let it cool for some time at normal temperature. Then take it out in a clean bowl and garnish with finely chopped pistachios, almonds and some saffron threads.

Before offering food to Lord Krishna on Janmashtami, take care of the ingredients according to the rules of worship and fasting of your home. Especially if you are making it for fasting, decide the use of sugar, milk and other ingredients as per your tradition.

Tips to make Makhana Kheer delicious

Roast the Makhanas well: Roasting the Makhanas on low flame improves their taste and aroma.

Make sure to add coarse makhana: Instead of keeping all the makhana whole, grinding some of the makhana coarsely makes the kheer more creamy.

Use a heavy-bottomed vessel: This reduces the chances of the milk sticking or burning at the bottom.

Add sugar at the end: To keep the texture of the kheer right, add sugar only when the makhana is cooked well in milk.

Do not overcook the kheer: After turning off the gas, the kheer cools down and becomes thick.

Kheer is a traditional and popular choice among homemade offerings on Janmashtami. By using makhana, you can prepare a slightly different taste from normal rice kheer. The combination of milk, makhana, cardamom, saffron and dry fruits makes it special.
