Essential Ingredients:

Quantity: Raw mango (chopped) 1 kg Jaggery/Sugar 500 grams (half kg) Fennel Seeds 2 tbsp Fenugreek Seeds 1 tbsp Turmeric Powder 1 tsp Red Chilli Powder 1 tsp Salt to taste Mustard Oil 1 cup Quick Step-by-Step Recipe: Prepare the mango: Wash, peel and cut the raw mango into small pieces.

Now spread these pieces on a clean cloth and expose them to light sunlight for 3-4 hours. This will remove their moisture and the pickle will last longer. Roast the spices: Lightly roast the fennel and fenugreek seeds on a pan. This will enhance their aroma many times. Once cooled, grind them coarsely.

Jaggery/Sugar Syrup: Pour some water into a pan, add jaggery or sugar, and let it melt. When the syrup thickens slightly, add the dried mango pieces.

Spice Mix: Add turmeric, red chili, salt, and ground fennel and fenugreek powder. Cook on low heat for 8-10 minutes, allowing the spices to soak into the mango. Oil Tempering (the lifeblood of pickles): Let the mixture cool slightly. Then, add mustard oil. This will prevent the pickle from becoming soggy and will prolong its shelf life.

Expose to sunlight: Store the prepared pickle in a clean glass jar. Expose it to sunlight for a few hours daily for 4-5 days. Your delicious sweet pickle will be ready in just a few days!
