Green cardamom: 2
Cloves: 2
Fennel powder: 1 teaspoon
Ginger powder: ½ teaspoon
Big cardamom: 1
Coriander leaves: finely chopped (for garnishing)
Easy method of making Kashmiri Dum Aloo
Prepare the potatoes: Wash the small potatoes thoroughly. Boil them in a pressure cooker for 3 whistles to become slightly soft. Peel the boiled potatoes and pierce them lightly with a fork. Heat oil in a pan and fry the potatoes until they turn golden. Frying improves the taste and texture of the potatoes.
Whisk the curd: Take 1 cup of curd in a bowl and whisk it well. Ensure the curd is fresh; sour curd can spoil the gravy’s taste.
