If you have never had it before, you are really missing out on the most delicious Mughlai dish. Hyderabadi Biryani, Mirchi Ka Salan, Raita and Sheer Khurma are the perfect festive food.
Sheer Khurma is a festive pudding made by boiling fine vermicelli with milk, dates, nuts and sugar. Sheer Khurma is a Persian word, where ‘Sheer’ means ‘milk’ and ‘khurma’ means ‘dates’. This delicious and tasty dessert is made during Ramadan. Most Muslim households make it in large quantities and share it with friends and relatives.
Although the name sheer khurma literally means the presence of dates in the pudding, many households make it without using dates. So in a way it is similar to vermicelli but cooked for a longer time to thicken the milk, making it taste naturally sweet.
Heat 2 tbsp ghee in a pan and fry the vermicelli till it turns brown. Keep it aside. Boil milk in a pan, let it heat on low flame and add vermicelli. Cook it on low flame till the vermicelli becomes soft and cooked. Now add Nestle Milkmaid, dates and mix well. Heat this mixture till it thickens. Now pour this mixture into a bowl.
Heat the remaining ghee (2 tbsp) in a pan and add almonds, cashews, pistachios, chironji and melon seeds to it. When the nuts and seeds turn brown, add raisins to it. Add this to the vermicelli mixture and serve hot.
