Process of making Sabudana

To prepare Sabudana, tapioca roots are brought directly from the farm to the factories. They cannot be stored for long as they get spoiled quickly. First of all, they are washed thoroughly with a root washer. After this, they are cut with a rasper machine and the starch is separated from the pulp with the help of extractors.
The starch is kept in a tank for three to five days and then fermented. In this process, the amount of water reduces from 60 percent to 35-40 percent. After this, the starch cake is finely ground with spike mills and then roasted at 100 degrees Celsius for 6 to 8 minutes. The prepared grains are dried in the sun for 8 to 12 hours. In this way, sago becomes ready to be sold in the market.
Where is tapioca cultivated?
Tapioca is cultivated in many states of India. Tamil Nadu, Andhra Pradesh, and Kerala are its major producing states. Among these, the Salem region of Tamil Nadu contributes about 80 percent of the total tapioca production of the country. This is the reason why Salem is considered the largest center of tapioca.
