To make corn flour dhokla, you need all these:
Corn flour: 1 cup
Gram flour: half a cup
Curd: half cup
Ginger-garlic paste: 1 tablespoon
Salt: according to taste
Lemon juice: 2 teaspoons
Eno: 1 teaspoon
Oil: 1 tablespoon (for tempering)
Mustard seeds: 1 teaspoon (for tempering)
Green chillies: 2 (chopped, for tempering)
Curry leaves: 6-7 (for tempering)
Sugar: half a teaspoon (for tempering)
Water: as per requirement
Turmeric powder: a pinch (this was not mentioned in the article, but it is suitable for colour and health)
Now see how easy it is to make corn flour dhokla:
First, put corn flour, gram flour, curd, some water, ginger-garlic paste, turmeric, salt, and lemon juice in a large vessel and mix well. Mix. Beat it until it becomes a smooth, lump-free batter.
Now add Eno to this batter and mix it well with light hands immediately. Keep in mind that after adding Eno, do not beat the batter too much; mix it lightly.
Grease a plate or cake tin well with oil so that the dhokla does not stick to it. Now pour the prepared batter into it.
Cook it in a pre-heated steamer or cooker on medium flame for 15-20 minutes
To check whether the dhokla is cooked, insert a knife or toothpick into it. If it comes, Dhokla is ready.
Now comes the turn of tempering! Heat oil in a small pan. Add mustard seeds, chopped green chillies and curry leaves and let them crackle.
Now add some water and sugar to this tempering and let it boil. Pour this tempering and sugar on the prDhokla dhokla.
Let the dhokla cool slightly, then cut it into square pieces. Serve it hot with green chutney or sweet chutney and enjoy the taste!
