Ingredients for making Achari Arbi:
Arbi: 500 grams (boiled and peeled and chopped)
Mustard oil: 5 tablespoons
Spices:
Nigella seeds: 1/2 teaspoon
Celery seeds: 1/2 teaspoon
Asafoetida: a pinch
Ginger: 1 teaspoon (grated)
Green chillies: 2-3 (chopped)
Turmeric, red chilli powder, salt, black salt and dry mango powder: as per taste
Coriander leaves: for garnish
For Achari Masala:
This is the special spice that will add life to your dish!
Coriander seeds: 1 teaspoon
Fennel: 1 teaspoon
Fenugreek seeds: 1/2 teaspoon
Mustard seeds: 1/2 teaspoon
Black pepper: 5-6
Celery: 1/2 teaspoon
Dry red chillies: 2-3
Method of preparation:
Prepare pickle masala: First of all, lightly fry coriander, fennel, mustard seeds, fenugreek, black pepper, celery and dry red chillies in a pan on low flame. When the spices start giving out fragrance, turn off the flame and let them cool and then grind them coarsely.
Add tadka: Now heat mustard oil in a pan. Add celery, nigella seeds and asafoetida and fry lightly. Then add grated ginger and green chillies and cook for some time.
Mix arbi with spices: Now add chopped boiled arbi in the pan and fry for 2 minutes. Then add turmeric, salt, red chilli, black salt, dry mango powder and prepared pickle masala and mix well.
Cook: Cook on low flame for 2 minutes so that all the spices are well mixed with the arbi.
Garnish and serve: Finally garnish with some coriander leaves and turn off the flame. Your delicious Achari Arbi is ready!
