Ingredients for making Soya Chaap Cutlet
Soya chunks – 1 cup
Gram flour – 1/2 cup (better than maida or cornflour)
Finely chopped onion – 1
Finely chopped coriander leaves – 2 tsp
Finely chopped green chillies – 2-3
Ginger paste – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tsp
Red chilli powder – 1/2 tsp
Chaat masala – 1 tsp
Garam masala – 1/2 tsp (if desired)
Salt – according to taste
Lemon juice or dry mango powder – 1/2 tsp (to give a spicy taste)

Easy method of making Soya Chaap Cutlet
1. First of all, heat water in a pan. When the water starts boiling, add soya chunks to it and boil for 12-15 minutes so that they become soft well.
2. Now drain the water from the boiled soya chunks and let them cool down a bit.
3. Put the soya chunks in a mixer jar and grind them coarsely. Keep in mind that do not add any water and do not make them a paste. Only a little coarseness will give a good texture to these cutlets.
4. Now take out this ground soya chunks in a big bowl. Add gram flour, finely chopped onion, green coriander, green chili and ginger paste to it.
5. After this, add turmeric, red chili, coriander powder, chaat masala and garam masala (if adding) to it.
6. Lastly, add salt and lemon juice or dry mango powder and mix all the ingredients well and knead it like a dough.
7. Now give the shape of cutlets from this mixture. You can make them round or oval. Keep the cutlets a little thin so that they can cook quickly and thoroughly.
8. Heat a non-stick pan and apply a little oil on it. Place these cutlets on low flame. Cook them till they turn golden on both sides.
9. While cooking the cutlets, cover the pan for 1-2 minutes. By doing this they will cook well inside.
