Let’s learn how to make this special dish step by step.

For marination:

1 kg mutton (goat meat)

1 cup yogurt

2 tbsp ginger-garlic paste

1 tsp turmeric powder

2 tsp red chilli powder

1 tsp garam masala powder

1 tsp salt

Juice of 1 lemon

For rice:

3 cups basmati rice

5 cups water

3-4 cloves

2-3 cardamoms

1 bay leaf

1 small cinnamon stick

1 tsp salt

For biryani masala:

3 large onions (sliced)

2 tomatoes (chopped)

2 green chillies (slit)

1/4 cup mint leaves

1/4 cup coriander leaves

1 tsp cumin seeds

2-3 cloves

2-3 cardamoms

1 small cinnamon stick

1 tsp garam masala powder

1/2 tsp saffron strands (optional)

1/4 cup milk (to soak saffron)

1/4 cup ghee or oil

Step 1: Marinate the Mutton

First, let’s marinate the mutton. Take a big bowl and add the mutton pieces. Pour in the yoghurt, ginger-garlic paste, turmeric, red chilli powder, garam masala, salt, and lemon juice. Now, use your hands (or a spoon) and mix everything really well. Make sure every piece of mutton is coated in the spices.

Once done, cover the bowl and let it rest. If you’re in a hurry, marinate for 2 hours. But if you have time, leave it overnight in the fridge. The flavours will be much deeper, and the meat will be softer.

Step 2: Cook the Rice
Biryani needs perfect rice, right? Start by washing the basmati rice a few times until the water runs clear. Then, soak it in water for 30 minutes. This makes the rice long and fluffy.

In a pot, bring water to a boil. Add the cloves, cardamoms, bay leaf, cinnamon, and salt. Now, add the soaked rice and cook it for a few minutes only until it’s 70% done. The grains should still be a little hard. Drain the water and set the rice aside. The rice will finish cooking later when we layer the biryani.

Step 3: Cook the Mutton
Now let’s cook the mutton. Heat some ghee or oil in a big pot. Add cumin seeds, cloves, cardamom, and cinnamon. Let them crackle and fill your kitchen with a beautiful aroma.

Next, add sliced onions and fry them until they turn golden brown. Take out a handful of these fried onions and keep them aside for garnish later.

Add green chillies and chopped tomatoes to the pot. Cook until the tomatoes become soft and blend into the masala. Now, add the marinated mutton. Stir everything well and let the mutton cook on medium heat. It will take about 30-40 minutes for the mutton to become soft and tender. If the pot looks dry, add a splash of water.

Step 4: Layer the Biryani
Here comes the fun part layering. Take a big pot for the biryani.

First layer: Spread half of the cooked mutton at the bottom.

Second layer: Add half of the cooked rice on top of the mutton.

Third layer: Sprinkle some mint leaves, coriander leaves, fried onions, and a pinch of garam masala.

Repeat the layers one more time. If you’re using saffron, soak it in warm milk for 10 minutes and pour this saffron milk on top of the final rice layer. This gives a lovely colour and rich aroma.

Step 5: Dum Cooking
Now, we lock in all the flavours. Cover the pot with a tight lid. You can even seal the edges with dough to trap the steam inside.

Cook the biryani on very low heat for about 20-30 minutes. This step is called “dum,” and it lets the flavours mix beautifully. The steam will cook the rice fully, and every grain will absorb the spices from the mutton.

Step 6: Serve and Enjoy
Once done, gently fluff the biryani from the sides, making sure not to break the rice grains. Serve hot with raita (yoghurt dip) and a fresh salad.

When your family takes the first bite, they’ll taste the soft mutton, the flavorful rice, and the love you put into every step.

Tips for Perfect Biryani:
Use good-quality basmati rice: It gives long, soft grains.

Marinate overnight: This makes the mutton soft and full of flavour.

Layer with care: Don’t mix the mutton and rice. Layer them properly for the best taste.

Don’t overcook rice: Cook the rice only 70% before layering. It will finish cooking during dum.
