Homemade Mango Pickle Guide: The summer season has arrived, and the market is full of raw mangoes (kairi)! The very mention of a pickle makes your mouth water. So today we have brought such a wonderful recipe – spicy raw mango pickle, which will double the taste of your food and be good for your health! So let’s learn the easy way to make this delicious pickle.
Ingredients required to make raw mango pickle:
Raw mangoes (kairi) – 1 kg (washed well, dried, cut into pieces)
Fennel – 2 tablespoons
Fenugreek seeds – 1 tablespoon
Mustard seeds – 1 tablespoon
Nigella seeds – 1 tablespoon
Turmeric powder – 2 tablespoons
Red chili powder – 2 tablespoons (according to your taste)
Salt – 100 grams (or according to your taste)
Mustard oil – 300 ml (heated and cooled)
Method to make raw mango pickle:
First of all wash the raw mangoes thoroughly and then wipe them with a clean cloth and dry them completely. Keep in mind, there should be no water left at all. Now cut the mangoes into small pieces.
Lightly fry fennel, fenugreek seeds and mustard seeds in a pan. When they become slightly warm and start emitting a good aroma, turn off the gas and grind them coarsely.
Now put the chopped mango pieces in a large vessel. Add ground spices (fennel, fenugreek, mustard), nigella seeds, turmeric powder, red chili powder and salt and mix well. Make sure that all the spices are well coated over the mango pieces.
Pour heated and cooled mustard oil over the mango pieces and mix well. There should be enough oil so that all the mango pieces are well immersed in it.
Now fill this pickle in a clean and dry glass or porcelain vessel. The vessel should also be absolutely dry.
Close the lid of the vessel properly and keep it in the sun for 3-5 days. Stir the pickle once every day with a clean and dry spoon.
If you find the pickle dry, you can heat some more oil, cool it and add it so that the pickle is always immersed in oil.
To store the pickle for a long time, keep it in a cool and dry place.
