For the chicken:

Chicken – 1 kg, cut into pieces
Yogurt – 1 cup
Ginger-garlic paste – 2 tablespoons
Lemon juice – 2 tablespoons
Red chili powder – 1 teaspoon
Turmeric powder – ½ teaspoon
Garam masala – 1 teaspoon
Salt – to taste

For the rice:

Basmati rice – 3 cups, soaked for 30 minutes
Whole spices – bay leaves, cloves, cardamom, cinnamon
Salt – to taste

Other ingredients:

Onions – 3 large, sliced
Tomatoes – 2, chopped
Green chilies – 2, slit
Chopped fresh coriander – a fistful
Fresh mint leaves – a fistful, chopped
Saffron – a pinch, soaked in hot milk
Oil or ghee – 4 tablespoons

Preparation of Cooking Biryani:

Biryani is not cooking. It’s creating memories. Every step is taken with love, and the result is pure magic. Let’s do it step by step.

Marinate the Chicken

Marination is the key to a good biryani. Add chicken, yogurt, ginger-garlic paste, lemon juice, red chili powder, turmeric, garam masala, and salt to a big bowl. Mix well with your hands get a sense of the spices coat each piece of chicken. Keep it aside for a minimum of an hour. If at all possible, leave it overnight. The longer it is kept, the softer and tastier.

Cook the rice

The biryani rice should be fluffy and light. Boil a lot of water in a big vessel. Add salt, whole spices like cinnamon, cardamom, cloves, and bay leaves. The water will have a great aroma! Add the soaked rice and cook for 5 to 7 minutes. The rice should be cooked only 70% — it will get cooked with chicken later. Drain the rice and set aside.

Cook the Chicken

Boil oil or ghee in a big pan. Add chopped onions and sauté until crispy and golden brown. Take half of the onions and keep it aside. It will provide a wonderful crunch later. Now in the same pan, add the green chilies and tomatoes. Saute until the oil and tomatoes get separated and become soft. Then add the chicken, which was marinated before. Let it simmer for 15 to 20 minutes until the chicken is tender and the masala is thick and rich. Layer the Biryani

This is where the magic occurs. In the cooked chicken pot, evenly spread half of the chicken. Sprinkle some coriander, mint leaves, and fried onions. Add a layer of cooked rice on top. Repeat the layers of chicken, herbs, and rice. Finish with the saffron milk drizzled over the last layer. This provides the biryani with its golden brown color and light aroma.

Dum Cooking

Dum cooking is the cause of the magic of biryani. Top with a tight cover. Cooking in very slow heat for 20 minutes. Slowly, steam seeps into chicken and rice with the strong spices so that each morsel bursts out into flavors.
